Appellation’s barley risotto with roasted zucchini... Executive Chef Mark McNamara shares his delicious risotto recipe, a great way to use those delicious tomatoes and green leafies from your garden (and that zucchini that grew so big when your back was turned!). Mark uses South Australian barley instead of rice which adds a unique and rich textural element to the risotto as well as doing justice to fine SA produce.
